This cheese is loosely based on a Caerphilly recipe, and it is wrapped in stinging nettles (Urtica dioica) that are completely edible. After pressing and brining, the Cornish Yarg cheese is wrapped in nettle leaves picked wild and frozen for use throughout the year. The leaves are carefully brushed onto the cheese in a traditional pattern and they attract wonderful natural occurring moulds of various colours, which help the cheese ripen. As the cheese matures, these edible nettles impart a delicate, slightly mushroomy taste. The final product has an attractive, lacy pattern of leaves in blue and green, giving the finished cheese a very unique appearance.

Beneath the golden rind of Lincolnshire Poacher lies a cheese not dissimilar to a traditional West Country Cheddar – deep and rich in flavour, with a smooth lingering aftertaste. This particular Poacher also has a slight nutty hint to give it that little bit of extra special sweetness.

Made using cow’s milk and then washed in Mason's Yorkshire Tea Gin, which is produced in the market town of Bedale, North Yorkshire, the company believe it to be the only cheese in the world to be produced using the spirit. AND it won silver prize at the Great Yorkshire Show in their prestigious Dairy class. Making this cheese even more appealing. They decided on the name 'Endeavour' after Captain Cooks famous ship which was anchored off Botany Bay, hence the botanical connection, and subsequently then sunk in the American war of independence and famous the Boston tea party, hence the Yorkshire Tea edition of the gin being used!
