Gruyere is a hard yellow Swiss cheese that originated in the cantons of Fribourg, Vaud, Neuchâtel, Jura, and Berne in Switzerland. It is named after the town of Gruyères. Gruyère is sweet but slightly salty, with a flavor that varies widely with age. It is often described as creamy and nutty when young, becoming more assertive, earthy, and complex as it matures. When fully aged (five months to a year), it tends to have small cracks that impart a slightly grainy texture.

Camembert

Due to price variations from cheese producers, we will contact you with the price upon receiving your order.

To make a good Camembert, you must have good milk. That’s why Le Rustique works with partner farms close to the dairy in Pacé in Normandy. The milk producers run family farms, usually with between 50 and 70 cows, producing an average of 20-25 litres of milk per day; it takes 2.2 litres of milk to make one Camembert.

Stinking Bishop

£0.00
Due to price variations from cheese producers, we will contact you with the price upon receiving your order.

Stinking by name, but not necessarily by nature… Stinking Bishop is known the world over for its strong smell and distinctive rind, but contrary to common belief, the cheese itself actually has a delicious, delicate flavour. The name “Stinking Bishop” comes from the pear used to make the Perry that the cheese is washed in during the maturing process. Brown/pink and pungent on the outside, creamy, smooth and subtle on the inside, Stinking Bishop really is a cheese that everyone should try at least once in their lifetime. Just make sure you close the fridge door properly when you put it back in!

Isle of Mull

£0.00
Due to price variations from cheese producers, we will contact you with the price upon receiving your order.

A hearty, full-flavoured Scottish Cheddar, Isle of Mull is drier in texture than our other Cheddars with flavours that are upfront, richly savoury and boozy. The Reade family farm produces all of its own sustainable energy from wind, wood, and its own hydroelectric power plant. A heat exchange system uses the heat removed from the milk in the evening to warm it back up for the cheese in the morning.

Old Winchester

£0.00
Due to price variations from cheese producers, we will contact you with the price upon receiving your order.

Old Winchester is based on a Gouda recipe. Gouda recipes call for the cut curds to be washed after draining. This removes lactic acid from the curd, making Gouda characteristically sweeter and also prolonging its life. Various tweaks to the original recipe has led to a Gouda/Parmesan/Cheddar cross, and a cheese that is unique to the Smales family. The cheese has a full flavour, an underlying sweetness, and a wonderful crystalline finish that crunches on the tongue.
